CHIP Tip No. 29: Celebrate a St. Patrick's Day!

Celebrate St. Patrick’s Day and the coming of spring with
a traditional Irish recipe.
St. Patrick’s Day on March 17 remembers the
patron saint of Ireland and is often celebrated with parades, green
clothing and plenty of Irish food.
You don’t have to be Irish to receive some
good luck this St. Patrick’s Day! Just be sure to wear green
and cook up some traditional Irish fare. Irish cuisine is very basic,
seasoned with a rich history rather than spices. Potatoes, leeks
and cabbages are the vegetables widely used in Ireland, and this
classic dish features two of them.

Colcannon
1 Tablespoon canola oil
2 cups finely chopped cabbage
1 bunch green onions, sliced
5 medium potatoes, cooked, peeled and mashed
1 cup skim milk or light soymilk
3 Tablespoons fresh parsley, minced
Fresh ground pepper
* Heat the oil in a large
skillet, add cabbage and cover.
* Sautee until the cabbage is thoroughly cooked.
* Remove the lid, add scallions and cook until the cabbage begins
to turn a golden color.
* Combine the potatoes and milk in a separate bowl and mix together.
* Add the potato mixture and parsley to the cabbage mixture and
cook until the mixture begins to brown.
* Fluff the mixture with a wooden spoon and season with fresh ground
pepper.
Makes 6 servings
